What is taking Heidi's space? New food coming to Highlands Square.

It sure looks different on Highlands Square. For as long as I can remember, the intersection of 32nd and Lowell has been dominated by a sign for Chipotle, Mondo Vino and Heidi's Deli. But with Heidi's moving out last year, the corner sure has felt empty.

According to the North Denver Tribune, The Matador will open this summer, possibly by Cinco de Mayo. The Matador will serve Tex-Mex style cuisine and premium tequilas. There are currently four Matador restaurants in Seattle, two in Portland and one in Boise. To check out a menu from one of these location, click here.

Keeping with the Mexican food theme, the highly anticipated Pinche Tacos, Tequilla and Whiskey opens next Wednesday at 32nd and Irving. What started as a food cart and has has turned into the hottest taco in town will be a welcome addition to the neighborhood. The space is looking great and there is no doubt it will be a hit.

And if tacos aren't quite your thing and you need something a little sweeter, then check out Sweet Cow Ice Cream which should open in early April. This 50's style soda shop started in Louisville, created a following with their ice cream truck and will likely bring lots of smiling faces to the Highlands.

And with these three moving in, there is still room for more restaurants to join the block. Sadly, Common Grounds will be moving to Sunnyside soon which will open up their current location. And the former spot of Venue is for lease as well. Hopefully another restaurant will replace it soon, ideally just in time for summer.
