Live Urban Agents Tell You: Best Memorial Day Recipes

We can't believe it's already Memorial Day weekend!

With the crazy Spring housing market keeping us busy, we haven't even had a chance to think about how we are going to celebrate Memorial Day...until now! We asked Live Urban agents for their go-to picnic, potluck, and BBQ recipes (or Denver area restaurants to pickup the best takeout) to share with you.

So, take a minute or two to think about those who have served and sacrificed to make our freedom possible, and celebrate the long weekend with some of these yummy ideas!

John said:My new picnic favorite is Salt and Vinegar Potato Salad. It's tangy, salty and completely addictive because of the Old Bay Seasoning in the recipe. Find it here:http://www.epicurious.com/recipes/food/views/salt-and-vinegar-potato-salad-235029

Ryan said:Here's one for my fellow Paleo followers:I like to make paleo key lime parfaits. Nothing is as difficult as walking past the dessert portion of the picnic buffetand trying to resist the urge to ruin the awesome pre bbq workout you did just to grab something sweet. These paleo parfaits are super tasty, and they also keep you on track toward being able to jump in a bathing suit and hit up a pool party afterwards. http://paleomg.com/key-lime-pie-parfaits/

Mark said:I always hear "Are you going to bring that corn salad?":2lb bag of frozen corn, I lb bacon, Green bell pepper Red bell pepper, Scallions. (i cup each) Fry the bacon, drain and crumble. Dice all the veg to the same size as the corn. Put all the ingredients in a bowl, and mix with 1-11/2 cups mayonnaise, salt and pepper. Use frozen corn, still frozen (trust me on this) and make it the morning of your picnic. By the time you're ready to serve it will still be cold. Simple, easy, enough for a crowd, and always a hit.

Jana said:I like this easy, fresh recipe I made up because butter! It's surprisingly good (butter) and people actually eat it even though it's a vegetable. Boil 6 ears of fresh corn on the cob for a couple minutes, not too long, then cut from cob. Let cool. Toss in a bowl with butter (maybe a half stick, depending on your taste), chopped fresh basil leaves (3-4 T), finely chopped red onion (half onion) and half a chopped fresh red pepper. Salt and pepper to taste. Mmmm. If there isn't any good fresh corn, use the highest quality canned organic you can find.

Emily said:My mom's delicious homemade baked beans - which I am pretty sure were her mom's recipe too - who knows how far back it goes! I honestly don't recall my mom ever really measuring anything, or my Gran either, but here is the "recipe"! I promise it is worth turning on the oven for this one even on a hot day.

1 cup of ketchup
1 cup of brown sugar
1/2 of a small onion chopped fine
6-8 slices of raw bacon cut into pieces
2 cans of butter beans drained OR use dry white lima beans and follow directions on package to cook them
salt and pepper to taste
Mix all ingredients in a baking dish and bake uncovered for at least 1 hour at 300 degrees. Stir occasionally, and if they get a bit dry add a little water.

Dawn said:Memorial day is all about the cocktails.

Boozie Arnold Palmer for a party
1 750mil bottle of Rising Sun Organic Vodka
3 organic black tea bags
Lemonade
Fresh lemons
In a large mason jar soak the tea bags in the vodka, overnight is best but the tea starts to infuse its flavor in the vodka fast so if you only have a couple of hours or want to shake the mason jar you can make it happen faster.
In a punch bowl or pitcher,Slice a lemon into rings, pour two parts tea infused vodka to four parts lemonade. By the glass, pour two ounces of the vodka over Ice,top with lemonade, garnish with lemons.
The Denver Mint
2 oz Rising Sun Organic Vodka
4 oz lemonade
2 rings cucumber
sprig of fresh mint
In a glass muddle cucumber, mint and vodka. Add ice and top with lemonade. Garnish with cucumber ring and lemon peel.

Happy Memorial Day, and thank you to those who have served.
